Think you don’t like red cabbage? Think again!

This is one of my favourite dishes of all time. It’s so tasty!

You will need onion, garlic, apple, bacon, fennel seeds, balsamic vinegar… oh and a red cabbage.

It’s a warming, hearty dish that is perfect for winter. It’s also a good one to serve up during the holiday season as it goes well with a lot of the traditional ‘fayre’ at this time of year.

Red cabbage is stuffed with vitamins, minerals and antioxidants. Vitamins A and C will help with your immune system and protect your eyes from degeneration. Minerals such as calcium and magnesium will contribute to bone health, and the antioxidants and phytochemicals will slow the ageing process and protect against diseases like cancer and Alzheimer’s. And as if that wasn’t enough, red cabbage is also calorie sparse and nutrient dense, which means you can fill your face without worrying about weight gain.
